Light & tasty
The ideal heart-healthy kitchen cupboard should include plenty of different pastas. These include whole wheat, flavoured and fresh; fettuccini, lasagne and farfalle. Try these off-the-cuff ideas for a light and tasty pasta supper for two. Just vary quantities and ingredients to suit.
- Mix over a medium heat to form a thin sauce: 4 oz. (125 g) of goat cheese, 1/2 a cup (125 ml) of low-fat milk and 3 tbsp (45 ml) of chopped Italian parsley; toss with 2 cups (500 ml) of cooked farfalle and sugar snap peas.
- Sauté 3 cups (750 ml) of sliced assorted wild mushrooms in 2 tbsp (30 ml) of Flora margarine; add 1/2 a cup (125 ml) of beef broth and bring to the boil; stir in a sliced scallion or green onion, 1 tsp (5 ml) of fresh thyme and spread over cooked lasagne.
- Combine in a blender until smooth: 1/4 cup (50 ml) walnuts, 1 clove garlic, 1/4 cup (50 ml) low-fat ricotta cheese and 1/2 a cup (125 ml) of low-fat milk; toss with cooked fettuccini.
